mana'eesh (singular: man'oushe) is one of the most recognizable street and bakery foods across the levant; a warm flatbread baked with olive oil and a variety of possible toppings, including za'atar, that's traditionally eaten as a breakfast food, but enjoyed through the late night.

reem’s naturally leavened version has the depth and texture that makes fresh manoushe special. the crust gets crisp at the edges while staying soft and airy underneath, and the zaatar is earthy, citrusy, and rich with olive oil in the way good za'atar should be.

prep instructions

1. preheat your oven to 450 F
2. remove all the packaging and either place your manoushe directly on the oven rack, or on a baking tray.
3. bake for 5-7 minutes or until the edges are golden brown.

it’s perfectly satisfying on its own, but also easy to build into a full meal with vegetables, labneh, olives, and strong tea alongside it.
