this rich, pure tahini is made from 100% ground sesame seeds, blended until smooth and pourable. it’s deeply savory, nutty, and balanced enough to work just as hard in sauces as it does straight from the jar.

it’s the foundation of our lamb shawarma marinade, the base of our tahini sauce, and the quiet hero behind other amazing dressings, sauces, and fillings in arab cuisine. it's rich without the heaviness, and can be paired with date molasses as a bread dip (traditional iraqi breakfast), swirled into yogurt for a meat marinade, or thinned with lemon and garlic for an all-purpose sauce that goes with everything.

1 cup tahini

¼ cup lemon juice

1¼ tsp table salt

¾ cup water, added gradually


texture guide:

1. slightly thinner for shawarma drizzle (add 1–2 tbsp water)

2. slightly thicker for falafel dip

3. yogurt-like consistency for a sandwich spread

tahini thickens when cooled, so keep it slightly looser than your ideal thickness. it keeps for 5–7 days when refrigerated. stir or loosen with water before serving.

preparation

step 1. in a bowl, add your tahini, lemon juice, salt, and whisk vigorously. the mixture will seize, thicken, and turn grainy, and it may look broken or too thick, but don’t panic. this is essential for proper emulsification.

step 2. this is the transformation step. start slowly by whisking in ¼ cup of water. whisk until smooth, and continue to add more water a few tablespoons at a time while whisking. when you’ve whisked in all the water, the texture should be smooth and pourable, but not thin. similar to loose yogurt or heavy cream.

step 3. taste and adjust if needed:
- more lemon for a brighter sauce
- more salt for a punchier sauce
- more water for a lighter drizzle sauce

samneh is the arabic word for ghee, which is clarified butter. ghee is a naturally purified version of clarified butter where all detectable water is removed, making it shelf stable. our samneh is jordanian-style and infused with herbs and spices that make it savory and aromatic.
is samneh vegan?
samneh is made from butter, so it’s from an animal source and is not vegan.
how many servings does each jar make?
we currently only carry our small 6oz jar, which has about 12 servings.
does samneh require refrigeration? how long does it last?
samneh is well filtered, making it pure butter fat that doesn’t decompose when temperature is stable. it doesn’t need to be refrigerated and is technically safe for years; however, the chef recommends a 2-year best by date to enjoy it with the flavors remaining intact. shawarmaji maintains a strong commitment to more responsible sourcing and flavors created with cultural integrity, which means our products contain no preservatives, no artificial flavors, and no high-fructose corn syrup.
