together, our lamb spice and tahini bring warmth, savoriness, and a grounded, earthy foundation to any meal. they can elevate grilled meats, roasted vegetables, grains, and legumes alike, and they work across dishes and techniques, whether you’re seasoning, or crafting a sauce, dip, or filling.

the bundle includes:

one 2.5oz jar of lamb spice: a warm, aromatic blend designed specifically for lamb, but just as good on other cuts of meat, or even vegetables. a combination of black pepper, coriander, allspice, and other warming spices that build flavor without overwhelming the dish. use it on shawarma, kebabs, meatballs, burgers, or rubbed directly onto meat before grilling, roasting, or pan-searing.

one 11oz jar of tahini: our rich, pure tahini made from just ground sesame seeds, blended until smooth. it’s nutty, savory, and easy to work with. mix it into marinades, whisk it into sauces, or spoon it over cooked meat to add richness and balance. it’s also the base of our tahini sauce famously used in our lamb shawarma wraps.

1 cup tahini

¼ cup lemon juice

1¼ tsp table salt

¾ cup water, added gradually


texture guide:

1. slightly thinner for shawarma drizzle (add 1–2 tbsp water)

2. slightly thicker for falafel dip

3. yogurt-like consistency for a sandwich spread

tahini thickens when cooled, so keep it slightly looser than your ideal thickness. it keeps for 5–7 days when refrigerated. stir or loosen with water before serving.

preparation

step 1. in a bowl, add your tahini, lemon juice, salt, and whisk vigorously. the mixture will seize, thicken, and turn grainy, and it may look broken or too thick, but don’t panic. this is essential for proper emulsification.

step 2. this is the transformation step. start slowly by whisking in ¼ cup of water. whisk until smooth, and continue to add more water a few tablespoons at a time while whisking. when you’ve whisked in all the water, the texture should be smooth and pourable, but not thin. similar to loose yogurt or heavy cream.

step 3. taste and adjust if needed:
- more lemon for a brighter sauce
- more salt for a punchier sauce
- more water for a lighter drizzle sauce

we source all of our spices from jordan and india. we’re committed to using spices that are grown in their native lands to best preserve their true flavors that are dependent on the soil and climates they’re grown in.
how are your spices processed?
we get our spices raw and whole. we then roast, grind, and mix them in-house, so you don’t get a spice mix that has been sitting in a warehouse and then on a shelf for months before it gets to your kitchen.
how do i store spices?
our spice jars are pretty airtight and meant for retaining freshness. we would recommend keeping the jars in your pantry and away from direct sunlight to preserve shelf life.
how long are spices good for?
when spices “expire”, thankfully, there isn’t a health risk if they’re consumed. spices expiring means they have lost their flavor and potency. it’s said that spice blends can retain most of their flavor for up to 2 years, but for maximum freshness and potency, we recommend consuming our ground spices within six months.
