garlic has been used in food and medicine for over 5,000 years since it was first domesticated in the tien shen mountain of china. from there, it made its way to egypt, the middle east, india, and then all around the rest of the world. in the early 1900s, a town in california quickly started to become known as the biggest and best garlic producers in the U.S. that town was gilroy, california, which is not far from our current shawarmaji headquarters. in fact, many of our team members met while working in different industries in that town years ago.

since shawarmaji has such close ties to gilroy, it only made sense that we used the best and freshest garlic distributor in the nation - christopher ranch. christopher ranch produces over 50% of the garlic in the united states. not only is their garlic top tier quality, but so are the people that founded it and work there. we recently got an invite to tour their facility in gilroy, which contributed to further growing our relationship with them, and we now buy our garlic directly from their farm. it doesn't get any fresher and more real than farm-to-shelf.
